Throughout January, a sweet treat is enjoyed after meals and at tea time. Whether traditional or revisited, the galettes des rois delight young and old every year. From Pierre Hermé to Louis Vuitton to the Ritz Paris, we take a look at 10 dazzling, epiphanic creations.

 

Whether you like the classic frangipane or more original combinations, every year the pastry chefs at top-of-the-range hotels and luxury houses redouble their efforts to satisfy lovers of galettes de rois.

2025 is all about cereal flavours at the Peninsula Paris. The frangipane is reinvented with hazelnuts, enhanced by notes of oats and hop caramel. An oat praline and smoked vanilla cream round off the wheat ear-shaped sweet dreamed up by pastry chef Anne Coruble.

Hazelnut/almond frangipane and crunchy puff pastry with cane lines come together in the Dior galette des rois, designed by chefs Jean Imbert and Romuald Bizart. The bean is hand-painted and echoes the lucky symbols of Monsieur Christian Dior, including stars, four leaves, bees, roses and clovers.

This year, chef Léandre Vivier has created an ultra-crisp galette with a flaky croissant pastry, whose design echoes a multitude of flowers. Inside is an almond frangipane boosted with pecans and maple syrup.

Pierre Hermé has come up with several galettes des rois, ranging from the traditional almond to the hazelnut and gianduja creation, but the sweetest is the original combination of almond and lemon cream. A galette that awakens the palate!

With its butterfly (a Butterfly Pâtisserie emblem) embossed on the pastry, the Hôtel de Crillon’s galette des rois imagined by chef Matthieu Carlin features a frangipane dressed in almond slivers and enhanced with vanilla-tonka salted butter caramel.

The trendy Angelina boutique has come up with a galette des rois with inverted puff pastry and a pastry cream with pecans and caramelised walnuts. The must-have? The raw pecans that dress up the creation and add texture to the palate.

For the Bristol Paris, chef Yu Tanaka unveils a galette inspired by his Christmas log. It features a perfectly executed puff pastry and a honeyed frangipane cream with citrus notes. The perfect marriage of sweetness and acidity, with a decoration reminiscent of the hotel’s beehives.

A vol-au-vent style galette: this is what the Ritz Paris Le Comptoir offers. Chef François Perret reveals all his inventiveness in a creation made with hazelnut frangipane, apple compote, praline insert and crunchy sobacha (a Sarasin tea).

 

The Louis Vuitton galette des rois

The Louis Vuitton galette des rois, created by chef Maxime Frédéric, is a celebration of chocolate. The vanilla frangipane cream is accompanied by a dark chocolate and tonka bean ganache and a Viennese puff pastry decorated with cocoa powder, with, of course, the famous Louis Vuitton motif as decoration.

Once again, chef Maxime Frédéric, who also designs the Louis Vuitton galette, presents us with a wonderful sweet treat for the palate. Carried off by an ultra-elegant rosebud design, the galette features a frangipane with hints of orange blossom that invites you to escape.
