Hugo Desnoyer x Hennessy: successful marriage of cognac and meat

The renowned French butcher Hugo Desnoyer collaborates for the third time with the Hennessy spirits house. Discover the gustatory alliance of a veal tartar, served with a glass of Hennessy X.O. cognac!

 

A collaboration that will undoubtedly attract lovers of gastronomy and spirits! For the third time, French master butcher Hugo Desnoyer has joined forces with Hennessy. Around a table in the 16th arrondissement of Paris, the collaboration offers a singular experience, based on the combination of meat and Hennessy X.O. cognac.

 

“Sharing with Hennessy the values of passing on know-how, the Maitre Artisan Boucher likes to associate a selection of chosen pieces with the creations of Renaud Fillioux de Gironde, Maitre Assembleur of the House of Hennessy”, said Hennessy in a statement.

 

 

From mid-May, Hugo Desnoyer will offer a new taste experience on the menu of his restaurant Pairing MEAT COGNAC. A powerful combination of two quality products will be offered to customers: a tartar of milk-fed veal from Corrèze, prepared with a knife, accompanied by a glass of Hennessy X.O. cognac “which plays the role of a gastronomic revelator”.

 

According to Hennessy, the two products have aromatic profiles that combine perfectly.

 

“Intense in aroma, the Hennessy X.O. cognac is the optimal echo to the substance, chewiness and flavors of Hugo Desnoyer’s veal tartar.”

 

A remarkable combo

 

Veal is a signature product of the French master butcher, whose texture and color are greatly appreciated by fine gourmets.

 

“The pink of the veal is delicate, pearly, the texture of the meat is fine while being dense”, explains Hugo Desnoyer.

 

If Hugo Desnoyer works and masters remarkably well the red meat, the veal represents, for him, a kind of subject of study. The master butcher is indeed known for offering one of the best veal in France, which he likes to prepare in an original way, like the veal tartar which remains one of his signature dishes. The recipe of the veal of Corrèze appears besides in the last book of recipes of Hugo Desnoyer.

 

 

With meat of such quality, the flavors of Hennessy X.O. cognac prepare an explosion in the mouth. This spirit is a balanced blend of spicy and woody notes. Its amber color, mahogany highlights and tannic aroma presage its powerful character and aging.

 

“On the nose and palate, it reveals the sweetness of its candied fruits, the tone of its spices, the richness of its wild cocoa aromas and the character of its woody notes.”

 

The veal tartar with a knife, accompanied by a glass of Hennessy X.O cognac, will thus be exclusively available on the menu of Hugo Desnoyer’s Table, from May 15 to November 15, 2023, for the sum of 45 euros.
